Ireland has a long & rich history with many layers of people groups having invaded the island only to be assimilated into the prevailing culture. The Celts, the Gaels, the Vikings, the Normans, the Scots & the English have all landed but each has added their distinctiveness to make Ireland what it is today. Irish people are very social, making any excuse to have fun together (craic) through music, stories, drama, food & drink. We are a hospitable people which is why so many people love to vacation there. There's always someone with a story to tell.

Ireland has also grown a lot in the last decade of so. The Republic has prospered, Northern Ireland is at peace and a new generation are driving a new level of sophistication, particularly in the food culture. We are being creative with our seafood, we are playing up the purity of our farm produce, and are making a name for ourselves with new Irish cuisine. Irish food is all about letting the wholesomeness of the ingredients speak for themselves. Quality produce, simplicity, delicacy and flavor.
